
Oh my gosh. This is delicious! If you're sick of your smoothies and are wanting something fulling, satisfying and a little on the sweet side (maybe because your'e tired or it's cold out), then this my friends is for you.
Full of protein, fibre and good fats this will keep you going for at least 4 - 5 hours. You could leave out either chia seeds or psyllium husks, but make sure you include one of them as it helps to bind the mixture and is your source of fibre here.
Ingredients:
4 eggs
dash of water
2 scoops chocolate protein powder
1tbsp cacao powder
1tbsp chia seeds
1tbsp psyllium husks
defrosted frozen berries
1tbsp almond butter
coconut yoghurt (optional, not pictured)
Method:
Mix the eggs, water, protein powder, cacao powder, chia seeds and psyllium husks in a mixing bowl and whisk together until well combined.
Heat a frying pan and add a dash of oil. Treat this mixture like scrambled eggs, and just scramble them until cooked through on your stovetop.
When ready, put them in a bowl, top with defrosted (or fresh in summer) berries, drizzle with your nut butter of choice and add a dollop of coconut yoghurt if that's your thing.
