
I've called these peppy bliss balls because of the secret ingredient that absolutely is a must and takes these to the next level - food grade peppermint oil! Just 1-2 drops, but man, it makes a difference.
These are low in sugar, with only 10 dates, packed full of vitamins and minerals such as zinc, vitamin E, B vitamins and antioxidants. A great source of healthy fats too.
They can be made nut free by swapping out the cup of nuts for extra sunflower and pumpkin seeds; I'd do 1.5 cups of each. Store these in the fridge for up to 5 days or in the freezer like I do.
Ingredients:
10 medjool dates, chopped up
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup raw mixed nuts (or any nuts you like)
1 cup desiccated coconut
pinch of salt
1/3 cup water
1-2 drop of food grade peppermint oil (start with 1, do a taste test, then add another if you want)
Method:
Blitz the seeds, coconut, nuts and pinch of salt in a food processor until finely ground.
Add the cacao powder, dates and peppermint oil and give another good blitz, while it's processing, add the water. The mixture should start to come together now.
If you find the texture is a little dry and not holding together, just add a bit more water.
Roll 1-2tsp of the mixture into balls and you're done!
