Peppy Bliss Balls



I've called these peppy bliss balls because of the secret ingredient that absolutely is a must and takes these to the next level - food grade peppermint oil! Just 1-2 drops, but man, it makes a difference.


These are low in sugar, with only 10 dates, packed full of vitamins and minerals such as zinc, vitamin E, B vitamins and antioxidants. A great source of healthy fats too.


They can be made nut free by swapping out the cup of nuts for extra sunflower and pumpkin seeds; I'd do 1.5 cups of each. Store these in the fridge for up to 5 days or in the freezer like I do.



Ingredients:
  • 10 medjool dates, chopped up

  • 1 cup sunflower seeds

  • 1 cup pumpkin seeds

  • 1 cup raw mixed nuts (or any nuts you like)

  • 1 cup desiccated coconut

  • pinch of salt

  • 1/3 cup water

  • 1-2 drop of food grade peppermint oil (start with 1, do a taste test, then add another if you want)



Method:
  • Blitz the seeds, coconut, nuts and pinch of salt in a food processor until finely ground.

  • Add the cacao powder, dates and peppermint oil and give another good blitz, while it's processing, add the water. The mixture should start to come together now.

  • If you find the texture is a little dry and not holding together, just add a bit more water.

  • Roll 1-2tsp of the mixture into balls and you're done!
