The only granola bar recipe you need

Finally, I nailed it. You absolutely HAVE to make these! A muesli bar that actually sticks and doesn’t turn into granola. They’re simple to make and quite versatile too; you could add hemp seeds instead of the LSA, or chia seeds or chopped nuts; the options are endless! I haven’t tried these with dried fruit, if you do, I’d suggest chopping them up quite small so that they don’t change how the bars hold together.

 

I hope you enjoy these and from now on you can walk right past that muesli bar aisle at the supermarket.

 

You can substitute the peanut butter for a seed butter for a nut-free version and you can replace the eggs with flax eggs. Simply mix 2 tbsp ground flaxseed with 5 tbsp water. Let set for 5 – 10 minutes before adding to the recipe.

 


Ingredients:

  • 3 cups rolled oats

  • ¾ cup smooth peanut butter

  • 1/3 cup honey (maple syrup doesn’t bind as well as honey)

  • 3tbsp LSA (or chia or hemp seeds, or a mix of all three)

  • 2 eggs

  • ½ cup chocolate chips (optional)

 


Method:

  • Preheat the oven to 175celsius and line a 9 x 9 inch baking dish with baking paper.

  • Melt the peanut butter and honey in the microwave for about 1 minute or until the peanut butter is a drizzly consistency

  • In a mixing bowl, add all ingredients and mix well, except for the chocolate chips

  • Transfer the mixture to the baking tray and VERY firmly press the mixture into the pan with your hands in an even layer. The firmer you press, the better they’ll stick together. If you’re using chocolate chips sprinkle them on top and press them into the mixture.

  • Bake for 15 – 17 minutes or until the edges start to brown and the centre is baked through and the slice is golden.

  • Remove from the oven and lift the bars out of the pan, using the baking paper to do so, and put on a wire rack to completely cool.

  • It’s important the bars are left to cool properly before slicing, otherwise they’ll break. I left mine all afternoon on the kitchen bench and sliced in the evening. Slice with a sharp knife.

  • These will freeze well too. Enjoy!
