Epic Banana Bread



There are a lot of banana loaf recipes out there, I get it. But please try this one – it’s so easy, you can add vegetables to it and my eldest voluntarily said “this is good banana loaf, mum” and he moans about everything!

 

Ingredients:
  • 1/3 cup oil (I use melted coconut, but a mild olive oil would work too)

  • ¼ cup honey/maple syrup

  • 2 eggs

  • 1 cup mashed banana (about 2 large ones)

  • ¼ cup unsweetened plain yoghurt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp vanilla essence

  • 1 tsp cinnamon

  • ½ cup wholemeal flour

  • 1 ½ cup rolled oats

  • ½ cup coconut

  • 1 grated carrot or courgette (with the liquid squeezed out)

  • ½ cup chocolate chips (optional)

 

Method:
  • Preheat oven to 170 celsius and line a 9x5inch loaf tin

  • Put oil, honey, eggs, bananas and yoghurt into the food processor and blend together. Then add the remaining ingredients except the chocolate chips and blend again.

  • Fold in the chocolate chips

  • Pour the mixture into the lined loaf tin and bake for 50minutes – 1 hour, or until a skewer inserted into the middle comes out clean. If it needs longer cover the loaf with foil so the top doesn’t burn.

  • Let the bread cool in the loaf pan for a few minutes before transferring to a wire rack to cool.

  • Slice and enjoy!
