
There are a lot of banana loaf recipes out there, I get it. But please try this one – it’s so easy, you can add vegetables to it and my eldest voluntarily said “this is good banana loaf, mum” and he moans about everything!
Ingredients:
1/3 cup oil (I use melted coconut, but a mild olive oil would work too)
¼ cup honey/maple syrup
2 eggs
1 cup mashed banana (about 2 large ones)
¼ cup unsweetened plain yoghurt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla essence
1 tsp cinnamon
½ cup wholemeal flour
1 ½ cup rolled oats
½ cup coconut
1 grated carrot or courgette (with the liquid squeezed out)
½ cup chocolate chips (optional)
Method:
Preheat oven to 170 celsius and line a 9x5inch loaf tin
Put oil, honey, eggs, bananas and yoghurt into the food processor and blend together. Then add the remaining ingredients except the chocolate chips and blend again.
Fold in the chocolate chips
Pour the mixture into the lined loaf tin and bake for 50minutes – 1 hour, or until a skewer inserted into the middle comes out clean. If it needs longer cover the loaf with foil so the top doesn’t burn.
Let the bread cool in the loaf pan for a few minutes before transferring to a wire rack to cool.
Slice and enjoy!
