
So, technically, these would be called a lactation cookie. But I didn't want to pigeon-hole these guys in the heading, because... dam. They are seriously good and even the boys love them.
These freeze really well, you can take them out in the morning, pop them in the lunchbox and off you go. These are considered a treat in our house, but whichever way you look at it, you are in control of the ingredients and there are no preservatives or nasty seed oils in here. Winning,
I bake these for friends when they're due a baby and I always get comments. I remember eating these straight from the freezer with my afternoon cup of tea - so good!
My friend and I have used this recipe over the years for each other as we've had our babies, she introduced me to it first though! I've swapped the brown sugar for coconut sugar as it gives this beautiful caramel flavour, and we added white chocolate and cranberries. The original recipe didn't have these in I don't think!
Ingredients:
2¼ cups rolled oats make sure you use fine rolled oats, not the large Jumbo rolled oats
½ cup coconut sugar
1/3 cup cranberries**
100gm white chocolate, chopped into small pieces**
2 tablespoons brewers yeast
2 tablespoons ground flax seed or LSA (use flax seed if wanting to make nut-free)
salt good pinch
1 tablespoon fennel seeds lightly toasted and ground*
1 teaspoon ground cinnamon
100 g butter melted (or coconut oil for dairy-free)
1 free-range egg
Method:
Preheat oven to 180degC. Line a baking tray with baking paper.
Place all ingredients in a mixing bowl and mix together until well combined.
Roll tablespoons of mixture into balls and place on prepared baking tray, evenly spaced apart. Use a fork to gently flatten cookies. Bake for 12-14 minutes until light golden. Leave cookies to cool. They will keep for up to a week in an airtight container, or can be frozen.
*Place fennel seeds in a fry pan and toast on medium heat for a few minutes until light golden and fragrant. Finely crush/grind in a mortar and pestle or in a nutri-bullet like I do.
**can adjust the cranberries and white chocolate to your taste and how much you enjoy either of these! I do find that the inclusion of them takes these biscuits to the next level.
