Courgette and Bacon Slice



Looking for an easy, family-friendly meal that ticks ALL the boxes? AND uses up all those courgette's in your garden that are turning to marrows? This bacon & courgette slice is simple to make, freezer-friendly and packed with flavour.


It's also perfect for lunchboxes, quick dinners, or when you need something for a picnic meal.


Tip: Double the recipe and freeze slices for those busy nights. Can also sub carrot or pumpkin for courgette if not in season, or if you're wanting a sweeter slice.



Ingredients:
  • 2 medium courgette (finely grated, liquid squeezed out)

  • 3-4 rashers of bacon

  • 1/2 onion, finely chopped

  • 1/2 cup cheddar cheese, grated

  • 1/2 cup self-raising flour

  • 2tbsp mild olive oil, or melted coconut oil

  • 3 eggs



Method:
  • Preheat oven to 180c. Line a 20cm square baking tin

  • Add to a bowl the grated courgette, finely chopped bacon, onion and cheese.

  • In another bowl, add the flour, oil and eggs, whisking well so that no lumps form. Add the egg and flour mixture to the courgette mixture, combine, and then pour into the prepared tin.

  • Bake for 25-30 minutes until set and starting to colour

  • Allow to cool in the tin before turnout and slicing. Slices can be frozen and thawed.
